Baked Sweet & Sour Chicken

Guys! I had no clue you could make good Chinese food at home. Forget good. I didn’t even know you could make half-way decent Chinese food at home. I tried once. Yeah. Once. That should tell you how it went. Suffice it to say that we made a fast food run that night. I haven’t even attempted since. That was more than 2 years ago.

Baked Sweet & Sour Chicken

The other day I plucked up the courage to try again, pulled on my big girl panties, and gave it another go. And guess what, a HUGE raging success!! I can’t even get over how amazingly delicious this baked sweet & sour chicken is! I haven’t been able to have the sweet and sour chicken at my favorite Chinese place ever since I went gluten-free (more on that another time) so the fact that this stuff uses cornstarch and is 100% gluten-free made my day!

Creamy Mac & Cheese :: A Little Help for the Holidays from Kraft

This post is sponsored by Kraft.

Are you guys ready for a whole lotta recipe posts?? I’ve been cooking and baking up a storm and I have a bunch of recipes to share with all of you!

Creamy Mac & Cheese

I don’t know about you, but I think these cold and snowy winter days scream for comfort food. And one of my all time favorite comfort foods is mac and cheese. When I was a kid, it was from that wonderful blue Kraft box. Now that I’m all grown up (…mostly. I may or may not still giggle at certain words and noises…) I love to make homemade mac and cheese. But I still love to get a little help from Kraft to really make this creamy mac & cheese pop!

Baked Potato Soup

I know, I know. I’ve been MIA all week. We got back from Disney World last Friday and I completely intended to post. But by Monday morning I was sick with a horrendous cold. So I’ve been out of the game for the week.

Baked Potato Soup

But I’m feeling much better now so I am finally back! After our wonderful trip to hot Florida, we arrived back in Colorado to a little bit of chilly weather. You know, that perfect fall weather that begs for hot cocoa and warm sweaters and delicious soups. Since the weather was begging for it, I happily obliged and made my all-time favorite soup – Baked Potato Soup!

Let me preface this recipe by saying that me+starches=besties. But seriously, how can you go wrong with a baked potato soup recipe!? Imagine those amazing loaded baked potatoes. Now imagine that deliciousness in soup form. Win-win. Amiright!?

20-Minute BBQ Cups

Howdy all! Apparently I’m southern today. I blame my near-death experience yesterday. What happened you might ask? I was sitting nicely on my patio, not moving, staining my table {sneak at upcoming project!!} when I felt a sharp pain in my right knee. I wait about a second and it gets seriously intense. I rub at it and see a wasp come flying out from under the table. What’s a girl to do? Most would be upset. Not me. I go into full.on.panic. I run inside as fast as I can and run to the medicine cabinet where I keep my epi-pen. That’s right… I’m deathly allergic to bee stings. I rush to my phone and call my hubby to get home STAT! Armed with my pen, I desperately tried to get control of my breathing. MUST. STOP. HYPERVENTILATING! After about 20 minutes I feel like I’m just a little short of breath. Should I have used my epi-pen? Maybe. Did I? No. Nurses make the worst patients, people. {FYI, if I ever felt like I was in serious danger I wouldn’t have hesitated to call 911}. Hubby’s been home to keep an eye on me and my knee is nice and swollen. Hooray.

20-Minute BBQ Cups

I’m not one to panic. Especially not in emergency situations. I’m a nurse, I’m trained to handle emergencies. But apparently when it comes to me… I freak. I almost died. Then I didn’t. What does that have to do with today’s recipe? Absolutely nothing. But I can write about whatever I want. 😉 And I thought you should all know of how almost.poop.myself scared I was.

So back to the foods. I whipped these up earlier this week and they were ah.mazing. They are definitely going on the “to make again” list. And they don’t take any longer than 20-minutes to make… baking and all! So when you need a quick recipe that will definitely impress, make these fantastic 20-Minute BBQ Cups!

Honey BBQ Chicken Sandwiches

Honey BBQ Chicken Sandwiches

I’ve been on a summer food kick recently. You probably realized that since over the last few weeks I shared ice cream and popsicle recipes. Part of summer cooking, in my opinion, does not include spending much time cooking. I would rather whip up quick and simple meals that allow more time to be spent outside with family! And the recipe I’m sharing today is definitely one of those recipes! It is so easy to make with a big flavor payoff! Without further adieu… Honey BBQ Chicken Sandwiches.
