Copycat Pudding Popsicles

TGIF! It is almost time for a 3 day weekend! Yippee! That means some quality time with the hubby! And because it is Memorial Day we also get to see some great fireworks. I love me some fireworks. Any of you have grand plans for this holiday weekend??

Copycat Pudding Popsicles

Have you noticed that the past 2 weeks I’ve been on an ice cream/popsicle kick. I think it is the beautiful 70 and 80 degree days we’ve been having. That combined with all the work I’ve been doing outside, I’m loving me some popsicles! One of my all time favorite popsicles as a kid was Jello pudding pops. I love them. In effort to get back in touch with my inner child, I decided to venture to make these delicious Copycat Pudding Popsicles.

Patriotic Ice Cream Sandwiches

Patriotic Ice Cream Sandwiches

So today’s “recipe” barely even qualifies as a recipe. I’ve been crazy busy this week working on some projects {including painting} and I have barely had time to cook or bake anything. Plus Denver has been having the most gloriously beautiful weather the past week. So with Memorial Day coming up and the warm weather we’ve been having, I decided to celebrate with a little treat: patriotic ice cream sandwiches!

So I whipped up a Creamy Vanilla Fruit Dip & Fruit Kabobs!

Caramel & Pecan {Turtle} Brownies

Beware the Ides of March!! Or rather, beware your waistline because of these brownies!

Caramel & Pecan {Turtle} Brownies

I’m a huge fan of turtles. No, not the animal {though those can be pretty adorable}. I’m talking turtles of the caramel, pecan, and chocolate variety. And since my birthday was this past Wednesday, I took advantage of the excuse and made the most amazing, decadent brownies. Seriously people. These rock my socks off. They may just be the best brownies I’ve ever had… and trust me, I’m a professional brownie taster {Ok, not really. But if such a job exists… can I have an application immediately?!}. That’s right people… Caramel & Pecan {Turtle} Brownies!!!

Chocolate Peanut Butter Fudge

Ok. I know I’ve been on a healthy-ish food kick recently but this is a recipe that I can’t even pretend is healthy-ish. It is outright sinful. I can remember my mom making it and me and my siblings fighting over who got to lick the spatula. My dad would even get in on the action! My mom has been making this for as long as I can remember. And before that, my grandma was making it. Apparently, it is a recipe that was given to my grandmother by her neighbor, Mrs. Morton, way back when. So in our family, we’ve always called it Mrs. Morton’s fudge. But you can call it the best Chocolate Peanut Butter Fudge ever!
