Patriotic Ice Cream Sandwiches

So today’s “recipe” barely even qualifies as a recipe. I’ve been crazy busy this week working on some projects {including painting} and I have barely had time to cook or bake anything. Plus Denver has been having the most gloriously beautiful weather the past week. So with Memorial Day coming up and the warm weather we’ve been having, I decided to celebrate with a little treat: patriotic ice cream sandwiches!

Just a warning… you have to work fast on this recipe. If you wait too long it will melt. So work quick, people. 😉

Patriotic Ice Cream Sandwiches
Recipe type: Dessert
  • 6 ice cream sandwiches
  • 6 popsicle sticks
  • ½ cup sprinkles
  1. Tear off a sheet of parchment paper. Set aside.
  2. Pull ice cream sandwiches from the freezer and unwrap. Push popsicle stick through the middle of the ice cream, lengthwise.
  3. Pour 1 tbsp of sprinkles out onto parchment paper and press sides of sandwich into sprinkles. Eat immediately or store on parchment paper lined plate in the freezer.

Since this is basically fanci-fying ice cream sandwiches, it takes all of 30 seconds before you can stuff it in your face. But it is also cute enough to throw together for a birthday party or any summer get together… say… a patriotic holiday that is 2 weeks away??

Plus it doesn’t hurt that ice cream is my weakness. 😉 What food is your weakness??
