Ice Cream Brownie Bites

You know how the Cookie Monster gobbles down cookies by smashing as much as possible into his face? Yeah. You can call me the Ice Cream Monster. {Are we all done laughing at the image of ice cream dripping down my face? Okay, good.} I’m an ice cream fiend. I love it. It is my downfall. I can’t really resist it… at all. It screams out to me, “Mmmm! Talitha! I’m so good! Come eat me!” And I happily skip off to obey my talking treat.

And since I’m pretending that making this treat is as part of my hold-on-to-summer-as-long-as-I-can mindset, I thought I would share it with you! It is absolutely scrumptious and I can’t believe I hadn’t thought of doing this before! I give you: Ice Cream Brownie Bites!


Ice Cream Brownie Bites
 
Recipe type: Dessert
Serves: 18
Ingredients
Brownies
  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup flour
  • ¼ tsp salt
  • ¼ tsp baking powder
Ice Cream
  • ½ gallon ice cream
  • Foil Cupcake Liners, {I know it isn’t an ingredient but it is crucial to the success of these!}
Instructions
  1. Preheat oven to 350 degrees F. Place foil cupcake liners in a cupcake pan. I repeat… foil liners! No paper allowed or it will stick to your brownies and make them inedible {unless you like to eat paper}. Spray a tiny bit of cooking spray in each foil liner.
  2. In a large pan, melt butter. Remove from heat and stir in sugar, eggs, and vanilla. Using a whisk, add cocoa, flour, salt, and baking powder.
  3. Spoon batter into foil cupcake liners until each is ½ full.
  4. Bake for 25-30 minutes in preheated oven. Allow to cool thoroughly once finished.
  5. Using a spoon, scoop ice cream onto cooled brownie. Use the back of the spoon to smoosh the ice cream flat and to the edges of the cupcake liner. Place in freezer until ice cream is hard.
  6. Take one out of the freezer and eat it!
