Fudge Brownies from Scratch

Would you call me a hypocrite if I told you that I love brownies and I love to bake but I have never ever ever made real brownies without a box mix? It’s true. I haven’t. I always figured you could, but whenever we made brownies when I was growing up my mom would walk to the pantry and pull out a good, ole, delicious box mix!

Fudge Brownies from Scratch

I have nothing against box mix brownies. I love the amazing taste and convenience of a box mix. Heck, I’ve even shared recipes {here and here} where I “make” brownies using a box mix. I’ve been craving brownies for about a month now. But, in my efforts to cut out snacking and sweets, I have resisted making them. And then this week my hubby asked for brownies. What’s a girl to do!? Sacrifice for your hubby and make the brownies, of course! But, being the good girl I am, I didn’t have any brownie mix. So I ventured to find a good recipe for brownies from scratch. And not just any brownies from scratch… ooey, gooey, soft, and delicious fudge brownies from scratch!

Serves: 8
  • 1 cup sugar
  • ½ cup flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 eggs
  • ½ cup oil
  • 1 tsp vanilla extract
  1. Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper. Set aside.
  2. In a medium mixing bowl, combine sugar, flour, cocoa powder, salt, and baking powder. Whisk to combine.
  3. Stir in eggs, oil, and vanilla extract until well combined. {Batter will be thick!}
  4. Spread batter into 9x9 parchment lined pan. Bake for 25-30 minutes or until toothpick comes out clean. Enjoy!

Oh my. I love me some fudge brownies. Seriously though. My brownies must be chewy and fudgy and these definitely fit the bill! Ha… fit. Your clothes definitely won’t fit after sitting there and eating a whole pan. Not that I would know….

  1. I tried to make these today and followed every direction. For some reason, they did not turn out well at all. I have no idea why since I measured everything out perfectly. The brownies turned out very flat and bitter.

    • Did you add baking powder? I’m no expert but I love baking. For the bitterness I don’t know what to tell you

  2. Made these this evening….delicious! However, I only used 1/4c coconut oil (I try to stay away from the vegetable/canola oils) with 1/4c unsweetened applesauce to bring “oil” total to 1/2c….they were perfect! Thank you!

  4. Just pulled these out of the oven and they are delicious!! Pretty much as easy a box mix but you know exactly what’s in them!! I ended up only using 1/3 cup oil because we were nearly out but they turned out just fine!! In fact I can hear my husband in the kitchen having seconds, I suggest a double batch!

  12. These are amazing!! First time making brownies from scratchx I will never go back to boxed muses! I wanted mint fudge brownies so I added peppermint extract and some mini choc chips. Sooo delicious and sooo fudgy…. and easy! Thanks for a great recipe.

  13. I made these tonight and they did not come out looking like this at all. They were flat and bitter and I followed the directions exactly. Would not recommend.

  15. I have to agree with the “halve the oil” crowd. Just too greasy with a half cup… I might try again with a half cup of applesauce, or just 1/4 cup of oil.

  16. I just wanted to say how amazing these are!!! Everyone asks for them. I mad a quadruple patch and used mini muffin tins..baked for 12 min. I love making them and then freezing them. They are still soft and gooey right out of the freezer. I will never buy boxed brownies ever again!!

  17. I just made theses and substituted with extra virgin Olive oil, only 1/3 cup, added some chopped walnuts and chocolate chips. Seriously the best brownies ever!!!!

  18. I made your brownies today for my husband. The only change I needed to make was to use Bobs Red Mill gluten free all purpose flour as he is celiac. These were fantastic! I make home made brownies often because they are so easy to make and need minimal flour. This will be my new go to recipe though because I love the chewy texture and that they are soft and gooey.   19. So delicious! Just make sure to leave the brownies to cool before you dig in, otherwise you will have a mess. Trust me, patience pays off with these. They are definitely worth the extra few minute wait.

  20. I used whole wheat flour and used 1/2 cup honey instead of the sugar and these were amazing, and maybe even more amazing after sticking them in the fridge for a while.

    However, they were not gooey and fudgy inside unlike the pictures…any ideas why? They were more cake-like (soft and dry, maybe a little moist but I was hoping for more). I baked them for about 23 minutes until the fork I stuck into it came out clean. Do I need to bake them for less time?

  22. This is my go to recipe anytime I make browines my boyfriend always ask for these! They are so delicious…I do change it up and instead of using regular oil I sub it with coconut oil which gives them a slight coconut flavor which we love even more!

  24. Since I found this recipe last week, I have made 3 batches of these delicious brownies! They do not last very long in my house! Tonight I doubled the batch and realized we have one of those brownie pans that makes edges on every piece and they are absolute perfection! I’ve never used oil instead of butter and I’m a believer now. It’s what makes the texture so great! I threw in some chocolate chips in tonight too and I just can’t get over how perfect they came out tonight.   25. I have been making these brownies for a couple of years now. It’s a great recipe as-is. I wonder what is happening to the people who said they didn’t turn out right. This makes brownies from scratch so easy that it’s dangerous. I always have these ingredients in the house!

    Recently I started cooking gluten free for one of my sons. I made these brownies the other day using Bob’s Red Mill 1 to 1 flour (which means it’s a direct flour substitute, no added xanthan gum or anything) and they came out great. A little more fudgy than usual, but my other son LOVED them. He’s 8 and he kept saying, “You made the batter on your own? They’re not from a box? They’re so good!” Which is funny since I haven’t made brownies from a box in many years!
