Caramel Pecan Turtles

  • 2½ cups pecans
  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup corn syrup
  • ½ cup + 2 tbsp sweetened condensed milk (1/2 can of 14 oz. can)
  • ¾ tsp vanilla extract
  • 2 cups chocolate chips
  • 1 tbsp shortening
  1. Line a large baking sheet with parchment paper.
  2. Place 2 to 3 pecans into groups, leaving 1 inch of space between each grouping. Set aside.
  3. In a medium sauce pan, melt butter over medium heat. Add brown sugar, corn syrup, and sweetened condensed milk and stir until well combined. Place candy thermometer into pan.
  4. Increase the heat to medium high and stir constantly. Heat and stir until it reaches 235-240 degrees F. Remove from heat and immediately stir in vanilla extract.
  5. Using a tablespoon, drizzle caramel over each grouping of pecans, making sure every pecan has caramel on it.
  6. In a microwave safe bowl, place chocolate chips (I used half milk chocolate, half semi-sweet) and shortening. Heat in the microwave for 30 second intervals, stirring in between until smooth.
  7. Using a tablespoon, spoon chocolate over caramel drizzled pecans.
  8. Set baking trays in the refrigerator for 30 minutes or until chocolate is set. Store in an airtight container.
