Last week was our week to bring snacks to our bible study. I was excited to make some new recipes to impress our friends but I didn’t have a lot of time to make these snacks! Did I mention, I’ve been insanely busy!? Fruit trays are always a great option but I wanted to give it a little twist plus add a great fruit dip! So I whipped up a Creamy Vanilla Fruit Dip & Fruit Kabobs!
The fruit kabobs are pretty self explanatory. You skewer whatever kind of fruit you want on a bamboo skewer. Here’s a little tip for you … it is hard to make these up early if you plan on putting apples on them. Mostly because apples, when left open to air, start to brown. So cut up your apples early and soak them in either ginger ale or lemon-lime soda. Voila! No more brown apples! Something about the lemon reacts and stops them from browning. They didn’t brown at all! Even after sitting out for 2 hours!
Now onto the delicious and creamy vanilla fruit dip recipe!
- 8 ounces cream cheese, softened to room temperature
- 8 ounces whipped topping
- 1 (3.4 oz) package instant vanilla pudding
- 1 (6 oz) container vanilla yogurt
- In a bowl, combine pudding mix with yogurt. Stir until pudding mix is dissolved.
- Blend cream cheese and pudding/yogurt mix together. Fold in whipped topping until thoroughly combined. Enjoy!
These were a huge hit! I made a lot of fruit kabobs and they were all gone by the end of the night! In hindsight, I could have halved the fruit dip recipe and been fine. The above picture is only half of what the recipe made. Oh well! More for me to eat at home! Yippee!
