Creamy Tomato Tortellini Soup
During the cold winter months there is nothing I love more than a hot cup of soup. Well, it has already been warming up nicely around here but I still can use the January date as a reason to make a soup! Growing up, one of my favorite soups was good ole’ Campbell’s tomato soup. So when I found this recipe for an adult version that uses Campbell’s tomato soup as a base, I knew I had to try it! I present to you Creamy Tomato Tortellini Soup!
I know that there are many “grown up” versions of tomato soup but I had to share mine with you. Most of those recipes have big chunks of tomatoes in them. And apparently I’m still a little bit of the picky eater I was when I was a kid because I really dislike chunks of tomatoes. So my variation is a recipe that gives you all that glorious tomato flavor without the giant chunks of tomatoes. {Though if you love chunks of tomatoes I’m sure you could easily put some in!}

- 3/4 cup Shredded parmesan cheese divided
Instructions
- Cook tortellini according to package directions and drain.
- Meanwhile, in a large pot combine tomato soup, broth, milk, cream, tomato sauce, tomato paste and all seasonings. Heat thoroughly, stirring frequently.
- Stir 1/2 cup cheese into soup, mixing while it melts to prevent sticking.
- Sprinkle each serving with additional cheese if desired.
One of the things I love about this Creamy Tomato Tortellini Soup is that it basically consists of throwing a bunch of ingredients into a pot and heating it! So simple and soooooo delicious! I promise, your taste buds will be thanking me!
