Cheesy Potato & Corn Chowder

Have you ever thrown together dinner, expecting it to be mediocre {at best}, and then it turns out to be AH-MAZING? Well, this was one of those recipes!

I actually whipped this up for the first time on our first anniversary! We had plans to go out that weekend to celebrate and no real plans the day of. So, it was a cold winter night and I need to whip up some dinner. I thought I would try making a hearty soup. I threw a bunch of things I had on hand in a pot and prayed it didn’t taste disgusting. And boy, were we lucky! This recipe quickly turned into a favorite around here! It is so deliciously good! The hubby calls it “anniversary soup” but for you, I give you: Cheesy Potato & Corn Chowder

Serves: 8
  • 2 tbsp butter
  • 1 cup celery, chopped
  • 4 cups chicken broth
  • 3 cups potatoes, cubed
  • 2 (15 oz) cans whole kernel corn, drained
  • 1 (15 oz) can cream-style corn
  • 1 package country style gravy mix
  • 1 cup milk
  • 1 cup heavy cream
  • ¼ pound Velveeta
  1. In large saucepan, melt butter over medium high heat. Add celery. Cook until tender, about 5 minutes.
  2. Add chicken broth and heat until boiling. Add potatoes and cook over low heat for 20 to 25 minutes or until potatoes are soft, stirring occasionally.
  3. Stir in corn and return to boiling. In a separate bowl, dissolve gravy mix in milk and cream. Add mixture into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.

Cheesy Potato & Corn Chowder

This is so good that they hubby and I often fight for leftovers the next few days! It is a perfect blend of creaminess and heartiness. I love it! I love me a good soup on chilly fall and winter nights!

I just happened upon your site here – I was looking for a decent cheesy/potato/corn/chicken chowder, and got on Pinterest, looked at some and yours had the ingredients I was wanting to use. I have tried MANY recipes prior to today, and the best one was blah. I gave your recipe a shot and OH. MY. GOD!!!! Words cannot describe how AWESOME this recipe is!!!! I did tweak it a bit to suit my wants, just a bit…I added onion, a carrot and a smidge of chopped garlic, shredded xtra sharp cheddar in addition to the velveeta, and I only had a packet of sausage flavored country gravy, not plain country gravy. HOLY COW!!! This recipe will be in my family now for eons to come!!! I don’t have time tonight, but I’ve got your site bookmarked and most definitely will be checking out your other recipes!!! Thank you!! My search for a decent soup turned into me finding the Holy Grail of Chowders!!! You rock!!!!
