I actually whipped this up for the first time on our first anniversary! We had plans to go out that weekend to celebrate and no real plans the day of. So, it was a cold winter night and I need to whip up some dinner. I thought I would try making a hearty soup. I threw a bunch of things I had on hand in a pot and prayed it didn’t taste disgusting. And boy, were we lucky! This recipe quickly turned into a favorite around here! It is so deliciously good! The hubby calls it “anniversary soup” but for you, I give you: Cheesy Potato & Corn Chowder

Ingredients
- 2 tbsp butter
- 1 cup celery chopped
- 4 cups chicken broth
- 3 cups potatoes cubed
- 2 (15 oz) cans whole kernel corn drained
- 1 (15 oz) can cream-style corn
- 1 package country style gravy mix
- 1 cup milk
- 1 cup heavy cream
- 1/4 pound Velveeta
Instructions
- In large saucepan, melt butter over medium high heat. Add celery. Cook until tender, about 5 minutes.
- Add chicken broth and heat until boiling. Add potatoes and cook over low heat for 20 to 25 minutes or until potatoes are soft, stirring occasionally.
- Stir in corn and return to boiling. In a separate bowl, dissolve gravy mix in milk and cream. Add mixture into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.
This is so good that they hubby and I often fight for leftovers the next few days! It is a perfect blend of creaminess and heartiness. I love it! I love me a good soup on chilly fall and winter nights!
