2-Ingredient Pumpkin Brownies

‘Tis the season for all things pumpkin. Time to break out the pumpkin and get ready for Thanksgiving {I’m resisting diving right into Christmas as hard as I can… but failing miserably!} I know that pumpkin has already been a main ingredient in a lot of dishes for at least a month now, but with Halloween over, the candy corn is gone and we can REALLY dive into pumpkin flavored everything!

I was trying to decide what to make this week with a can of pumpkin I had leftover from my most recent batch of Pumpkin Spice CreamerThen it hit me! 2-ingredient pumpkin brownies! So simple. So fast. Sooo delicious!

I actually whipped this up for the first time on our first anniversary! We had plans to go out that weekend to celebrate and no real plans the day of. So, it was a cold winter night and I need to whip up some dinner. I thought I would try making a hearty soup. I threw a bunch of things I had on hand in a pot and prayed it didn’t taste disgusting. And boy, were we lucky! This recipe quickly turned into a favorite around here! It is so deliciously good! The hubby calls it “anniversary soup” but for you, I give you: Cheesy Potato & Corn Chowder

Caramel Apple Cheesecake Dip

Fall is the season when pumpkin and apple dishes come out of the woodwork. They are everywhere you look… and I LOVE IT. I love me some good pumpkin dishes {my friend, Melanie, keeps tempting me with pumpkin ravioli!} but, for me, apple is where it is at {gasp! What!? The girl with the magnificent pumpkin roll!?}. Yes, I’m an apple fiend. I could eat apple dishes year round. I just love apples.

So when I stumbled across this recipe for a Caramel Apple Dip, I knew I had to give it a try {with my own twist, of course!}.

Easy Candy Corn Cupcakes

I was glancing at the calendar today as I sat down to write this post. How in the world can it be the middle of October already!? Wasn’t it just February yesterday!? Man, time is flying fast. Before you know it, Halloween will be here. I guess I better start thinking of Halloween costumes.

With the rapid approach of Halloween, I’m seeing more and more candy at the grocery store. There are giant bags of candy corn everywhere {which, of course, makes me think of my darling sister who has could eat an entire bag in one sitting}. Though I’m not one to consume an entire bag, there is something incredibly Halloween-y about candy corn. So, to bring a touch of candy corn into my life, I made some insanely easy Candy Corn Cupcakes.

Apple Crisp
