20-Minute BBQ Cups

Howdy all! Apparently I’m southern today. I blame my near-death experience yesterday. What happened you might ask? I was sitting nicely on my patio, not moving, staining my table {sneak at upcoming project!!} when I felt a sharp pain in my right knee. I wait about a second and it gets seriously intense. I rub at it and see a wasp come flying out from under the table. What’s a girl to do? Most would be upset. Not me. I go into full.on.panic. I run inside as fast as I can and run to the medicine cabinet where I keep my epi-pen. That’s right… I’m deathly allergic to bee stings. I rush to my phone and call my hubby to get home STAT! Armed with my pen, I desperately tried to get control of my breathing. MUST. STOP. HYPERVENTILATING! After about 20 minutes I feel like I’m just a little short of breath. Should I have used my epi-pen? Maybe. Did I? No. Nurses make the worst patients, people. {FYI, if I ever felt like I was in serious danger I wouldn’t have hesitated to call 911}. Hubby’s been home to keep an eye on me and my knee is nice and swollen. Hooray.

20-Minute BBQ Cups

I’m not one to panic. Especially not in emergency situations. I’m a nurse, I’m trained to handle emergencies. But apparently when it comes to me… I freak. I almost died. Then I didn’t. What does that have to do with today’s recipe? Absolutely nothing. But I can write about whatever I want. 😉 And I thought you should all know of how almost.poop.myself scared I was.

So back to the foods. I whipped these up earlier this week and they were ah.mazing. They are definitely going on the “to make again” list. And they don’t take any longer than 20-minutes to make… baking and all! So when you need a quick recipe that will definitely impress, make these fantastic 20-Minute BBQ Cups!


20-Minute BBQ Cups

Serves: 6
Ingredients
  • 1 (12-oz) tube biscuits
  • 1 pound ground turkey
  • 1 cup BBQ sauce
  • ½ tsp honey
  • ½ cup mozzarella cheese
Instructions
  1. Preheat oven to 400 degrees F. Brown ground turkey in a large skillet. Once cooked, add BBQ sauce and honey. Heat until bubbling.
  2. Place biscuits in an ungreased muffin pan with 1 biscuit in each tin. Using a spoon. press the dough up the sides of the tin. Make sure not to press it too thin!
  3. Spoon turkey mixture into cups until completely full. Sprinkle cheese on top.
  4. Bake for 8-11 minutes or until golden brown. Use a spoon to remove from muffin tins. Enjoy!

Ok. Seriously. You can’t beat something that is this delicious and only takes 20-minutes! Plus, using ground turkey is a little better for you! That’s what we like to call a win-win-win, people.

  1. So sorry to hear about your wasp episode. I am glad that no hospital visit was needed. I remember how painful the swelling after a wasp sting is, and how long it seems to take to get back to normal. Love you honey. Praying for fast recovery.
    Thanks also for the quick dinner idea. I think grandma and I will have to make these next week. They look tasty.

  2. Well, here’s another one allergic to bee stings. And, I also lived to tell my story. I was on my back porch one afternoon and saw a wasp. Of course, I screamed and turned around to run back inside and slam the door! In my terror, I forgot I had to go up ONE step, well, of course I didn’t make that step, fell on my ankle breaking 2 bones…. Morale of the story – either a sting or wheelchair??? Wheelchair of course. And, I still run from the things.

  3. Ack!! So glad you are ok. So far nobody (that we know of) in our house is allergic to bees! And YUM – I love easy biscuit cup recipes. They remind me of my chili cheese biscuits and I am always looking for new ones like this because 20 minutes meals ROCK! Pinned it!!

  4. Love your transition from almost-poop-myself to back to foods. ROFL Recipe looks good–and easy. Glad I clicked on this at Chic and Crafty. Scary episode indeed. You wanted near death experiences: when I was 20 I got flu, dehydrated, pneumonia sent asthma into hyperdrive and I ended up in respiratory intensive care. Nurses loved having a young patient with Brides magazines mixed in with the usual elderlies. Showed my fiance his potential future–we just had our 37th wedding anniversary, BTW. Anyway, the meds I needed sent my monitored heartrate into superspeed and irregularity they didn’t tell me about (thought I was unconscious) but the paddles were at my bed and charged. Probably vtach from their actions, I coded. One resident wanted to save me from the paddles if carotid massage worked. He got one try then they would shock me. NO ONE KNEW I COULD HEAR ALL THIS. I thought he was going to choke me to death! But it worked and I have no paddle scars. How’s that for an experience?

  5. It was my turn to drive the carpool. I sat in the seat of my minivan and realized that my keys were on the kitchen table. I was LATE! I dashed back in grabbed the keys and right back out only to find in seconds our 150 year old oak tree fell directly on the van crushing it to less than a foot tall. That quick! The tree which was enormous….weighing over a ton from estimates by local farmers…simply toppled roots and all! No wind and no warning! I never grumbled about driving the carpool again!
