2-Ingredient Pumpkin Brownies

‘Tis the season for all things pumpkin. Time to break out the pumpkin and get ready for Thanksgiving {I’m resisting diving right into Christmas as hard as I can… but failing miserably!} I know that pumpkin has already been a main ingredient in a lot of dishes for at least a month now, but with Halloween over, the candy corn is gone and we can REALLY dive into pumpkin flavored everything!

I was trying to decide what to make this week with a can of pumpkin I had leftover from my most recent batch of Pumpkin Spice CreamerThen it hit me! 2-ingredient pumpkin brownies! So simple. So fast. Sooo delicious!

Not familiar with the concept of 2-ingredient recipes? Let me explain, you take 2-ingredients, mush them together, and get a delicious treat! That’s it! All that this recipe needs is a box of family-sized brownie mix and a can of pumpkin. You don’t need any of the other ingredients that the mix says you need! And using pumpkin instead of all those other ingredients make these brownies healthier, right? Well, at least I’ll pretend it does.

  • 1 box Family Sized brownie mix
  • 1 (15 oz) can pumpkin
  1. Preheat oven to 350 degrees. Line a 9x9-inch pan with parchment paper and spray lightly with cooking spray.
  2. In a medium bowl, mix together pumpkin and brownie mix until smooth and incorporated.
  3. Spread batter into 9x9 pan and bake for 25-35 minutes or until toothpick inserted in center comes out clean.
  4. Remove brownies from the pan using the parchment paper lining and allow to cool completely.

Now don’t go expecting these brownies to taste like normal brownies. They are not normal brownies. For one, they are very dense and fudgy. Secondly, because pumpkin was added, well, they taste like pumpkin. Duh. Chocolate-y pumpkin-y goodness. So good!
